David Ellis, a British chef from Stoke-On-Trent got his culinary start as a young cook on the restaurant and fine gastro pub scene in the English midlands, before moving on to run kitchens in France, Australia and New Zealand.
After meeting his wife, Sam, a native North Carolinian, David moved to Raleigh. He began working at Ashley Christensen’s acclaimed Poole’s Diner, ascending to the role of Chef de Cuisine. It was here that he developed a love for southern cuisine and North Carolina produce.
In early 2024, David is set to open his first restaurant Figulina in Raleigh’s Warehouse District. Figulina takes his longtime obsession with handmade pasta and uses it as a vessel to highlight North Carolina ingredients. It’s inspired by the simplicity of Italian cooking with a southern undertone.
